Easy + Healthy Dinner
Ingredients
- frozen broccoli
- red onion, chopped into strips
- brussels sprouts, chopped into halves (or quarters if they’re xl)
- turmeric, black pepper, mustard powder, and garlic powder, to taste
- chickpeas (feel free to swap out with another bean/legume)
- 2 nori sheets
Preparation
To make the veggie stir fry, add the onion, brussels, and frozen broccoli to a pan over medium-high heat
After about 5 minutes, add about 1/4 cup water and stir, getting any small bits that may have started sticking to the pan
Continue stirring occasionally and adding water little by little for about 10-15 more minutes, until the veg is cooked to your liking
You can also use veggie stock instead of water for a bit more flavor
Once the veggies are cooked, mix in the spices then add to a bowl with the chickpeas
Use kitchen scissors (or fold and tear with your hands) to cut each of the nori sheets into 4 smaller pieces
