Easy Healthy Pumpkin Banana Bread
Ingredients
- 200g self raising flour, sifted (gf)
- 100g oats (gf)
- 75g natural sweetener of choice
- 200g over ripe bananas, mashed
- 200g pumpkin purée
- 60ml any non-dairy milk
- 1 tbsp apple cider vinegar
- 2 tbsp ground cinnamon
- 1 tbsp baking powder
- 2 tsp lemon juice
- 1/2 tsp salt
Preparation
Mix milk and cider vinegar and leave to curdle
Put all dry ingredients in a large bowl and mix until smooth
Add banana, pumpkin and lemon juice to the bowl and mix until smooth
Add milk mixture to the bowl and stir
Line a loaf tin with baking paper and pour in mixture
Oven bake on 180 degrees for 35 minutes or until golden and a skewer prod comes out clean
