Healthier Pumpkin Banana Bread
Ingredients
- 200g self raising flour, sifted (gf)
- 100g oats (gf)
- 75g natural sweetener of choice
- 200g over ripe bananas, mashed
- 200g pumpkin purée
- 60ml any non-dairy milk
- 1 tbsp apple cider vinegar
- 2 tbsp ground cinnamon
- 1 tbsp baking powder
- 2 tsp lemon juice
- 1/2 tsp salt
Preparation
Mix milk and cider vinegar and leave to curdle
Put all dry ingredients in a large bowl and mix until smooth
Add banana, pumpkin and lemon juice to the bowl and mix until smooth
Add milk mixture to the bowl and stir
Preheat oven to 180°C
Line a loaf tin with baking paper and pour in mixture
Oven bake at 180 degrees for 35 minutes or until golden and a skewer comes out clean
