Easy Vegan Pumpkin Pie

Ingredients

Crust

  • 180 g flour
  • 45 ml water
  • 60 g vegan margarine
  • 20 g coconut sugar
  • 1 teaspoon baking powder

Pumpkin cream

  • 250 g cooked pumpkin
  • 150 ml rice milk
  • 15 g maple syrup
  • 7g cacao butter
  • 15g coconut sugar
  • 1 teaspoon corn starch
  • 1 teaspoon gingerbread spice mix

Preparation

  1. Mix flour, baking powder and coconut sugar.

  2. Then add water, mix it together and add margarine.

  3. Mix it all together really well, form a ball and put it in the fridge for around 30 minutes.

  4. Then put crust in a pie pan.

  5. Mix all of the ingredients in a blender and pour it on crust.

  6. Bake on 180C(350F) for 30-40 minutes.
