Flavorful Dairy-Free Veggie Pesto

Ingredients

  • 2 large handful of spinach
  • 2 cups fresh basil
  • 1 sweet pepper such as yellow or orange, chopped
  • 1/2 cup walnuts or pistachios
  • 1 lemon, juiced
  • 3 garlic cloves, peeled
  • 2 tbsp olive or avocado oil
  • 1/4 cup nutritional yeast
  • A pinch of salt & pepper

Preparation

  1. Start by adding the spinach, yellow pepper, garlic cloves and nutritional yeast to a food processor and blend until well combined.

  2. Add the rest of the ingredients and continue to blend until everything is incorporated and becomes smooth in texture, scraping sides as you go.

  3. Toss with your favourite pasta or use in another way.
