Fully Raw Stuffed Peppers

Ingredients

  • 4 bell peppers sliced in halves
  • 1 zucchini
  • grape tomatoes
  • for sauce
  • 1 1/4 cup of chopped tomatoes
  • 1/2 cup of chopped squash
  • 2 cloves of garlic
  • 2 tbs of fresh basil
  • 1/2 tsp of pink himalayan salt
  • 1/2 tsp of paprika
  • 1/4 tsp of black pepper
  • for cheese
  • 1/2 cup of raw cashews soaked
  • 1/4 cup of filtered water
  • 2 tsps of nutritional yeast flakes
  • 1 1/2 tsp of apple cider vinegar
  • sprinkle of pink himalayan salt

Preparation

  1. Combine all ingredients for sauce into a blender or food processor

  2. Blend until smooth and pour into a bowl

  3. Combine all ingredients for cashew cheese into a blender or food processor

  4. Blend until smooth

  5. Spiralize zucchini and place zoodles into the bowl the sauce was poured in

  6. Roll zoodles around until evenly coated

  7. Place zoodles into bell pepper halves

  8. Use a melon scooper and scoop cashew cheese on top

  9. Top with grape tomatoes and fresh basil
