Vegan Chocolate Galaxy Donuts with No Refined Sugar

Ingredients

  • 1 1/2 cups white spelt flour
  • 3 tbsp cocoa powder
  • 1 1/2 tsp baking powder
  • 1/2 tsp bicarbonate of soda
  • 2 tbsp ground chia seed
  • 3/4 cup soy milk
  • 1 tsp apple cider vinegar
  • 1 tbsp vanilla extract
  • 1/3 cup grapeseed oil
  • 1/2 cup agave syrup

Icing

  • 3 tbsp coconut oil
  • 3 tbsp soy milk
  • 1 1/2 to 2 cups icing sugar
  • food colouring
  • edible glitter

Preparation

  1. This recipe makes 12 standard sized donuts.

  2. Stir the apple cider vinegar into the soy milk and leave for a few minutes.

  3. Stir together the dry ingredients.

  4. Combine the rest of the wet ingredients with the soy milk and then mix into the dry ingredients.

  5. Spoon into greased donut pans and bake for 10 minutes at 175°C or until a skewer inserted comes out clean. Cool for a couple of minutes in the tin before transferring to wire racks to cool.

  6. For the icing: melt 3 tbsp coconut oil, then add 3 tbsp soy milk and mix well. Stir in 1 1/2 to 2 cups icing sugar or until desired consistency is reached.

  7. For the galaxy effect: drop food colouring on the top of the icing and swirl with a small spoon. Dip the donut in, swirl around and carefully lift out. Repeat for each one. Sprinkle with edible glitter.
