Giant Single Serve Baked Vanilla Protein Cheesecake

Ingredients

Base

  • 2 crumbled up weetabix, 1/2 cup water
  • 30g @myproteinuk vanilla soy isolate
  • 10g @myproteinuk powdered peanut butter
  • 5g @natvialiving sweetener

Filling

  • 70g unsweetened soy yogurt, 50g @nushfoods vegan cream cheese, 5g Coconut oil, 5g @natvialiving sweetener

Toppings

  • half a passion fruit, strawberries, 5g desiccated coconut

Preparation

  1. Mix all of the base ingredients together and place in a non stick, relatively deep dish.

  2. Mix all of the filling ingredients together and place on top of the base.

  3. Place the oven proof dish in the oven for 20-25 mins at 180c.

  4. Take out of the oven, allow to cool and remove from the dish.

  5. Top with all the toppings.
