Ginger Orange Oyster Mushrooms

Ingredients

  • Oyster mushrooms
  • Kale
  • Coconut oil
  • 120ml fresh orange juice
  • 1 tsp rice vinegar
  • 1 tsp chilli flakes
  • 2 cloves garlic
  • Fresh ginger
  • 2 tbsp maple syrup
  • 2 tbsp soy sauce
  • 1 tsp corn starch
  • 2 tsp water

Preparation

  1. Prepare the orange and ginger marinade by mixing all marinade ingredients together

  2. Cook oyster mushrooms in a pan until tender

  3. Mix the cooked mushrooms with the marinade and cook until the sauce thickens

  4. In a separate pan, wilt kale in garlic and coconut oil.

  5. Taste and adjust seasoning as needed, such as adding more maple syrup, soy sauce, or vinegar.
