Ginger Orange Oyster Mushrooms
Ingredients
- Oyster mushrooms
- Kale
- Coconut oil
- 120ml fresh orange juice
- 1 tsp rice vinegar
- 1 tsp chilli flakes
- 2 cloves garlic
- Fresh ginger
- 2 tbsp maple syrup
- 2 tbsp soy sauce
- 1 tsp corn starch
- 2 tsp water
Preparation
Prepare the orange and ginger marinade by mixing all marinade ingredients together
Cook oyster mushrooms in a pan until tender
Mix the cooked mushrooms with the marinade and cook until the sauce thickens
In a separate pan, wilt kale in garlic and coconut oil.
Taste and adjust seasoning as needed, such as adding more maple syrup, soy sauce, or vinegar.
