Gingerbread Donuts
Ingredients
- Gingerbread Donuts
- 1 1/2 cups wholemeal flour
- 1 banana
- 1/2 cup treacle or molasses
- 1/4 cup dark brown sugar
- 1/3 cup oil
- 1 tbsp ground ginger
- 1 tbsp ground chia seed
- 3 tbsp water
- 1 cup soya milk
- 1 tsp bicarbonate of soda
- A pinch of salt
- To make the icing mix
- 2 cups icing sugar
- 3 tbsp melted coconut oil
- 3 tbsp soya milk
- 1/2 tsp lemon juice
Preparation
Mix the ground chia and water in a small bowl and set aside
Mash the banana in a mixing bowl then add the treacle, sugar and oil and mix well. Add the chia mixture and mix again
Stir in the flour until well mixed
Place the bicarbonate of soda in a bowl then warm the soya milk up in a small pan until just above lukewarm. Pour over the bicarbonate of soda and stir and then pour this into the flour mixture and gently mix until well combined
Spoon into the donut moulds. You should get 12 donuts
Bake in the oven at 175°C for about 12 minutes or until a cocktail stick inserted comes out clean
Leave in the tins for a few minutes before turning out onto wire racks to cool
Set your bowl over another bowl with some hot water in - this will keep the coconut oil liquid so your icing is the right consistency
You may have to adjust the quantity of soya milk slightly to get the right consistency for dipping the donuts in. But be careful as if you add too much milk the icing will just slide right off the donuts
I topped mine with some crystallised ginger too. Enjoy
