Gluten-Free Everything Protein Muffins
Ingredients
- Zucchini
- Carrots
- Oat Flour
- Rolled Oats
- Flax Egg
- Unsweetened Apple Sauce
- Cup of Almond Milk
- Vanilla
- Almond extract
- Sliced Almonds
- Chopped Pecans
- Sunflower Seeds
- Pumpkin Seeds
- Hemp Seeds
- Apricots
- Figs
- Raisins
- Goji Berries
- Cinnamon
- All Spice
- Coconut Sugar
- Baking powder
- Baking Soda
Preparation
Preheat oven to 180°C and line a muffin tin with paper liners
In a large bowl, combine dry ingredients: oat flour, rolled oats, baking powder, baking soda, cinnamon, all spice, and coconut sugar
In another bowl, prepare wet ingredients: mix flax egg, unsweetened apple sauce, almond milk, vanilla, and almond extract
Grate zucchini and carrots, then add them to the wet ingredients mixture
Fold in the nuts, seeds, and dried fruits: sliced almonds, chopped pecans, sunflower seeds, pumpkin seeds, hemp seeds, apricots, figs, raisins, and goji berries
Spoon the batter into the prepared muffin tin and bake for 20-25 minutes or until a toothpick inserted comes out clean
