Gluten Free & Vegan Sweet Potato & Quinoa Cakes

Ingredients

  • 1 small – medium sweet potato, skin removed & mashed (to cook either steam or bake)
  • 1 cup cooked quinoa
  • 1/2 cup almond meal
  • tips of 2 spring onions
  • 1 tsp. cumin
  • 1/4 cup finely chopped coriander
  • 2 tbsp. black sesame seeds
  • Himalayan Salt & pepper, to taste
  • Coconut oil for cooking

Preparation

  1. Combine all ingredients (cook the quinoa first & fry off the spices & spring onion tips)

  2. Place in the fridge for 30 mins or so to firm, before rolling into balls & baking in the oven for about 30 mins
