Gluten Free & Vegan Sweet Potato & Quinoa Cakes
Ingredients
- 1 small – medium sweet potato, skin removed & mashed (to cook either steam or bake)
- 1 cup cooked quinoa
- 1/2 cup almond meal
- tips of 2 spring onions
- 1 tsp. cumin
- 1/4 cup finely chopped coriander
- 2 tbsp. black sesame seeds
- Himalayan Salt & pepper, to taste
- Coconut oil for cooking
Preparation
Combine all ingredients (cook the quinoa first & fry off the spices & spring onion tips)
Place in the fridge for 30 mins or so to firm, before rolling into balls & baking in the oven for about 30 mins
