Grilled Peaches with Whipped Feta & Herbs

Ingredients

  • 2 large ripe peaches
  • 7 oz (200 g) vegan feta cheese (such as Violife)
  • 1/2 cup (112 g) vegan cream cheese (such as Tofutti)
  • 1 tbsp avocado oil or other neutral oil
  • 2 tbsp fresh mint, chopped
  • 2 tbsp fresh basil, chopped
  • 1/4 cup (59 ml) vegan honee, agave, or maple syrup

Preparation

  1. Allow the vegan feta and cream cheese to come to room temperature. Using a hand mixer, beat them together until nice and fluffy. Set aside.

  2. Cut the peaches in half to remove the pit, and then cut them into quarters. Brush the cut surfaces with a little bit of oil.

  3. Preheat your grill or grill pan to medium heat. Brush the grill with a little oil and place the peaches cut side down. Cook for 3-5 minutes or until they start to soften and show grill marks. Flip them over to the other cut side and repeat.

  4. To serve, spread about 1/4 to 1/3 of the whipped feta on a plate. Place a few of the grilled peaches on top. Drizzle with vegan honee or your preferred sweetener and sprinkle with chopped herbs.
