Mashed Cauliflower with Herbs

Ingredients

  • One large head of cauliflower
  • 2 teaspoons kosher salt
  • 1 tablespoon olive oil
  • 1 teaspoon nutritional yeast
  • 1 tablespoon dried parsley
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon garlic powder
  • 1/2 cup oatmilk
  • 1 teaspoon corn starch
  • Fresh cracked pepper to taste

Optional

  • Za'atar seasoning to taste

Preparation

  1. Cut the cauliflower into florets and steam or boil until tender

  2. Drain the cauliflower

  3. Mash the cauliflower

  4. Drain again to remove as much moisture as possible

  5. Mix the oatmilk and corn starch together before adding

  6. Add all the seasonings to the mashed cauliflower and mix well

  7. Heat the mixture while stirring for a couple of minutes to activate the starch
