Herb & Garlic Cashew Cream Cheese
Ingredients
- 1 cup cashew, soaked or boiled
- 1/2 cup water
- 1/2 lemon, juiced
- 1/2 tbsp olive oil
- 1/2 tbsp nutritional yeast (optional)
- 1 garlic clove
- 1 tbsp fresh dill, finely chopped
- 1 tbsp fresh basil, finely chopped
- 1 tbsp chives, thinly sliced
- a pinch of salt & pepper
Preparation
Add all ingredients, except for fresh herbs, and blend until smooth and creamy, scrapping sides as you go
Add a pinch of the herbs and blend to infused flavours
Add remaining herbs and mix with a spoon
Transfer to a dish and refrigerate for about an hour to let firm up
