Homemade Vegan Pumpkin Pie

Ingredients

Pie crust

  • 3 dl flour
  • 100 g vegan butter
  • 2 tbsp sugar

Filling

  • 3 dl pumpkin puree
  • 2 dl whipcream (soy)
  • 1,5 dl brown sugar
  • 1 tbsp corn starch
  • 1 tsp cinnamon powder
  • 1 tsp cardammom powder
  • 1/2 tsp ginger powder

Preparation

  1. Add the ingredients to a food processor and blend until it forms a dough.

  2. Press down the dough into a pie form and set aside.

  3. Meanwhile, make the filling.

  4. Add all ingredients to a pot on low heat and stir until everything is well combined.

  5. Pour the filling into the pie form and put in the oven at 200 degrees for 40 minutes.

  6. When the pie is done, let it set for a few hours before eating.

  7. Serve with whip cream on top and enjoy.

Notes

  1. Bake a butternut pumpkin in the oven for around 45 minutes until it gets soft.

  2. Scoop out the pumpkin and add it to a bowl.

  3. Mix the pumpkin with a stick mixer until it is nice and smooth to make pumpkin puree.
