Jackfruit Tacos with Roasted Corn and Slaw

Ingredients

  • Jackfruit (drained and squeezed)
  • Leon restaurants ketchup
  • Garlic powder
  • Sainsbury's chipotle paste
  • Black pepper
  • Extra virgin olive oil (evoo)
  • Red cabbage
  • Carrot
  • Leon restaurants Korean Mayo
  • Corn
  • Leon restaurants Aioli
  • Lime zest
  • Coriander
  • Bfree sweet potato wraps

Preparation

  1. Drain and squeeze the jackfruit well

  2. Mix jackfruit with ketchup, garlic powder, chipotle paste, black pepper, and olive oil

  3. Roast the jackfruit mixture in the oven for about 25 minutes

  4. Finely slice red cabbage and carrot

  5. Mix the sliced cabbage and carrot with Korean Mayo to make slaw

  6. Roast corn in the oven with aioli

  7. Sprinkle roasted corn with lime zest and coriander

  8. Assemble tacos by filling sweet potato wraps with jackfruit, slaw, and corn
