Jalfrezi

Ingredients

  • 1 can of chickpeas
  • 2 inch piece ginger
  • 1 red chilli
  • 1 green chilli
  • 1/2 white onion
  • 5 cloves garlic
  • 1 tsp ground coriander
  • 2 tsp cumin seeds
  • 1/2 tsp fenugreek
  • 1/2 tsp ground paprika
  • 1 veg stock cube
  • olive oil, salt & pepper
  • a big handful of spinach
  • 2 peppers (red/yellow/orange/green)
  • 1 tin of chopped tomatoes

Preparation

  1. Start by prepping the veg, cut the onion into half moons, dice up the chilli, ginger & garlic

  2. Deseed and slice the peppers

  3. Heat a pan, let it heat up & then add oil

  4. Throw in the onions & brown them for about 5 minutes, very important step! next add the ginger, garlic & chilli, fry for 1 minute or so

  5. Add in the spices & stir everything around

  6. Add in the peppers and cook for about 5 mins constantly stirring so nothing catches, then pour in the chickpeas and tomatoes

  7. Refill the tomato can with water and pour in along with a stock cube

  8. Stir everything together & then pour in the stock, bring to a boil & then reduce to simmer

  9. If it looks dry then add more stock

  10. Stir occasionally & after 20 mins when it is ready add in the spinach and serve it all together with some mint raita and fluffy chapati
