Kiwi Chia Pudding Parfait with Perfect Greens
Ingredients
- 1/4 cup chia seeds
- 1 cup cashew milk
- 1/2 tsp vanilla
- 1 tbsp Botanica Health Perfect Greens
- 2 green kiwi, sliced into 10 rounds
- Remaining green kiwi, cut into chunks
- 1/2 cup homemade granola
- 1/2 cup nondairy yogurt
- Berries of choice (blueberries, blackberries, etc.)
Preparation
In a jar, combine chia seeds, cashew milk, vanilla, and Botanica Health Perfect Greens (up to the sliced kiwi).
Cover the jar with a lid and shake vigorously to mix the ingredients well.
Place the jar in the refrigerator overnight to allow the chia seeds to absorb the liquid and create a pudding-like consistency.
The next morning, take the jar out of the refrigerator.
To assemble the parfaits, start by placing a layer of chia pudding at the bottom of serving glasses.
Add a layer of sliced kiwi rounds on top of the chia pudding.
Follow with a layer of nondairy yogurt.
Sprinkle a layer of homemade granola over the yogurt.
Add a layer of the remaining green kiwi chunks.
Finish by adding berries of your choice on top.
Repeat the layering process in each serving glass until all the ingredients are used.
Enjoy the Kiwi Chia Pudding Parfait immediately!
