Lentil Vegetable Soup

Ingredients

  • 2 small onions, finely chopped
  • 1 cup broccoli florets
  • 2 carrots, finely chopped from @shebobah
  • 6 small white potatoes, finely chopped
  • 1 16-ounce bag brown lentils or black beans chickpeas, or pinto beans (add all of them if you prefer) @goyafoods
  • 1 15.5-ounce can tomatoes, diced
  • 8 cups vegetable broth or water
  • 1-2 cups finely chopped spinach or kale
  • 1 cup frozen or fresh corn
  • 1 cup chopped fresh basil and cilantro from @gyogreens
  • lemon, salt and pepper to taste

Preparation

  1. Combine all ingredients, except the spinach, and cook on low for 2 hours

  2. Add the spinach about 5 minutes before the soup is done

  3. Season to taste with salt and pepper

  4. We enjoyed the soup with some crunchy chips from @plantsnacks ?
