Loaded Hummus Dip

Ingredients

  • - 1 tray of Maza Hoemoes
  • - 1 can of chickpeas, drained
  • - 1 tbsp of olive oil
  • - 1/2 tsp each of cumin, smoked paprika, dried oregano, dried basil, cayenne and sea salt
  • - 1/4 tsp of black pepper
  • - juice of half a lemon
  • - 2 cloves of garlic
  • - fresh herbs (I used parsley and chives)
  • - water
  • - some cherry tomatoes for garnish

Preparation

  1. Preheat the oven to 180°C / 350°F

  2. Add the chickpeas to a mixing bowl with the olive oil, cumin, smoked paprika, dried oregano, dried basil, cayenne, sea salt and black pepper

  3. Stir well and spread on a parchment-lined baking sheet

  4. Bake until golden brown (my oven took 25min and I stirred them at 15min)

  5. Set aside to cool down

  6. Now make a garlic sauce out of 1 tbsp of hummus, lemon juice, garlic and your fresh herbs

  7. Don't forget to save some fresh herbs for garnish

  8. Thin your garlic sauce out with water if you feel like yoy need to

  9. Add salt and pepper to taste

  10. Now spread out the rest of your hummus on a serving platter

  11. Top it with your roasted chickpeas, garlic sauce, halved cherry tomatoes and fresh herbs

  12. I served mine with some homemade tortilla chips

  13. For this I cut some tortillas in triangle shapes, put them in a bowl with olive oil, sea salt, cayenne, smoked paprika, cumin, black pepper and nutritional yeast

  14. I stirred them around until all of the tortilla pieces were covered in the herb mixture

  15. Then I baked them on 180°C / 350°F for 10-15min or until crispy
