Mango Sticky Rice
Ingredients
- for the sticky rice:
- 250g jasmin rice uncooked
- 250ml coconut milk
- 30-40g date sugar
- 1/3 teaspoon sea salt
- for the sauce:
- 120ml coconut milk
- 1 1/2 tablespoons date sugar
- 1 1/2 teaspoons corn starch
- a pinch of salt
- also you'll need 1 or 2 peeled fresh & ripe mangoes
Preparation
For the sticky rice, rinse the rice really well, next cover the rice with enough water and let it soak overnight or for a few hours. Since I don't have a steamer, I can't steam the rice as the original recipe! So add the rice after soaking with new water to a saucepan, bring it to a boil and cook over low heat until the water is absorbed and the rice is cooked after around 15minutes. Add more water if needed. For the sauce just mix in a pot the sauce ingredients together and stir in the corn starch, bring the sauce to boil and let it cook for 1-2 minutes until it's thick! Mix half of the sauce with the rice and keep the other half for later to drizzle over the mango and rice! Peel and cut the mangoes and serve on a plate! ENJOY!?
