Maple Soy Glazed Mushrooms on Sweet Potato Toast

Ingredients

  • 3/4 lb crimini mushrooms
  • 1.5 tbsp reduced-sodium tamari or soy sauce
  • 2 tsp sriracha
  • 2 tsp maple syrup
  • olive oil
  • sweet potato
  • sea salt
  • 1 ripe avocado
  • tahini for drizzling
  • hemp seeds for sprinkling

Preparation

Mushrooms

  1. Cut about 3/4 lb crimini mushrooms into approximately 1/8 inch thick slices

  2. Mix together 1.5 tbsp reduced-sodium tamari or soy sauce, about 2 tsp sriracha, and 2 tsp maple syrup

  3. Sauté in olive oil on high until starts to brown

  4. Add sauce mixture and sauté another minute until starts to stick to pan

Sweet potato toasts

  1. Cut sweet potato lengthways into about 1/4-1/2 inch thick slices

  2. Brush both sides with olive oil and sprinkle sea salt

  3. Bake on parchment-lined baking sheet at 400F until golden brown, flipping halfway

Assembly

  1. Place maple soy glazed mushrooms on top of sweet potato toasts

  2. Add sliced avocado

  3. Drizzle with tahini

  4. Sprinkle with hemp seeds and serve
