Mini Vegan Frittatas
Ingredients
- chickpea flour
- nutritional yeast
- baking powder
- garlic powder
- dried basil
- s+p
- water (I did 1/2 oat milk
- 1/2 water) for the “egg frittata” base
- then stirred in sweet corn (from frozen)
- a finely diced red bell pepper
- a couple quartered cherry tomatoes & chopped spinach
Preparation
Aked in the oven @ 375F for 35 mins
Turned out soooo delicious & filling ? had the quiche slices for leftovers the past few days, what a perfect brunch
