Mini Vegan Frittatas

Ingredients

  • chickpea flour
  • nutritional yeast
  • baking powder
  • garlic powder
  • dried basil
  • s+p
  • water (I did 1/2 oat milk
  • 1/2 water) for the “egg frittata” base
  • then stirred in sweet corn (from frozen)
  • a finely diced red bell pepper
  • a couple quartered cherry tomatoes & chopped spinach

Preparation

  1. Aked in the oven @ 375F for 35 mins

  2. Turned out soooo delicious & filling ? had the quiche slices for leftovers the past few days, what a perfect brunch
