Mushroom Avocado Cilantro Pesto Toast

Ingredients

Avocado pesto

  • 1 ripe avocado
  • 1/2 teaspoon salt
  • a dash of pepper
  • 1/4 cup cilantro
  • 1/2 teaspoon roasted garlic paste
  • 1 tablespoon lime juice

Mushrooms

  • mushrooms, sliced
  • 1 tablespoon coconut oil
  • 1 tablespoon avocado oil or neutral oil
  • 1 tablespoon garlic paste or minced garlic
  • 1/2 teaspoon salt

Toast

  • bread for toasting

Preparation

  1. Blend the avocado, salt, pepper, cilantro, garlic paste, and lime juice with a hand blender to make the pesto.

  2. Cut the mushrooms into 1/2 inch slices.

  3. In a pan, warm the coconut oil, avocado oil, and garlic paste.

  4. Add the salt and mushrooms to the pan, cover, and cook for a few minutes until they sweat.

  5. Flip the mushrooms and continue cooking until they are done and fragrant.

  6. Toast the bread.

  7. Spread the avocado pesto on the toasted bread and top with the cooked mushrooms.
