Mushroom Avocado Cilantro Pesto Toast
Ingredients
Avocado pesto
- one ripe avocado
- 1/2 teaspoon salt
- a dash of pepper
- 1/4 cup cilantro
- 1/2 teaspoon roasted garlic paste
- 1 tablespoon lime juice
Pan fried mushrooms
- mushrooms
- 1 tablespoon coconut oil
- 1 tablespoon avocado oil or neutral oil
- 1 tablespoon garlic paste or minced fresh garlic
- 1/2 teaspoon salt
Preparation
Blend the avocado, salt, pepper, cilantro, and garlic paste with a hand blender.
Add lime juice to the pesto and mix.
Cut the mushrooms into 1/2 inch slices.
In a pan, warm the coconut oil, avocado oil or neutral oil, garlic paste or minced fresh garlic, and salt.
Add the mushrooms to the pan, cover, and cook for a few minutes until they sweat.
Flip the mushrooms and continue cooking until they are cooked and fragrant.
Toast bread slices until golden.
Spread the avocado pesto on the toast and top with the pan-fried mushrooms.
