Vegan Mushrooms on Toast

Ingredients

  • 2 slices Bread for toast
  • 1 tbsp Oil or vegan butter
  • 3 cups Mushrooms chopped
  • pinch Salt
  • 1/2 tsp garlic powder
  • 5 tbsp Vegan cream cheese divided
  • 1-2 tbsp Water or non-dairy milk (for extra creamy)

Preparation

  1. Heat oil or vegan butter in a non-stick pan on medium-high heat.

  2. Add chopped mushrooms and a pinch of salt, and sauté for 2-3 minutes until the mushrooms are cooked.

  3. Add garlic powder, 3 tablespoons of vegan cream cheese, and start with 1 tablespoon of water; mix until creamy consistency.

  4. Toast the bread and spread 1 tablespoon of vegan cream cheese on each piece of toast.

  5. Top the toast with the cooked vegan creamy mushrooms.

Tips

  1. Use store-bought or homemade vegan cream cheese.

  2. Add salt and pepper to taste for seasoning.

  3. Garnish with fresh parsley or chives for extra flavor.
