No Bake - Fiber & Energy Bars

Ingredients

  • cup organic unsweetened unsulfured dried apples (or dried fruit of choice)
  • 1 cup raw walnuts (unsalted)
  • 1 cup pitted dates
  • 1 teaspoon CEYLON cinnamon

Preparation

  1. In a food processor, combine dates, apples and walnuts - blend until fine crumbs form, about 1 minute

  2. Add cinnamon - continue blending until mixture is very soft and holds together when pinched, about 3 to 4 minutes

  3. Press mixture into a 4 x 8-inch parchment lined pan and cover - chill for at least 2 hours or until firm

  4. Cut into bars (should make about 12) - (you can wrap individually and keep refrigerated for up to 5 days or freeze for up to 1 month)
