Noodle Salad
Ingredients
- 1 red paprika
- 1 carrot
- 1/4 chilli
- 1/2 thumb big piece of ginger
- 1/2 lime
- salt
- pepper
- 3tb soy sauce
- 2 portions glass noodles
- 1 handful cilantro
- sesame oil
- handful fried tofu
- 1/4 cucumber
Preparation
Chop the cucumber in small pieces
Slice the carrot and paprika in thin stripes
Chop the chilli and ginger in tinyy pieces
Fry chilli and ginger in oil
Add paprika and carrot
Add the lime, cook for a couple minutes
Spice with salt and pepper
Deglaze with soy sauce
Cook the glass noodles
Chop the cilantro
In another pan, refry the tofu one more time
Mix veggies with glass noodles
Top with cucumber, tofu and cilantro
Add more soy sauce and lime if needed
