Oat Blueberry Pancakes with Banana

Ingredients

  • 1 cup oats
  • 1 banana
  • 1 tbsp @unicornsuperfoods salted caramel protein powder (optional)
  • 1/2 cup plant milk
  • 1 tbsp flax meal
  • 1 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/2 tsp vanilla extract
  • Handful blueberries (or any fruit of choice)

Preparation

  1. Add all the ingredients to a blender (except blueberries).

  2. Blend until smooth.

  3. Stir in the blueberries.

  4. Heat a non-stick skillet over medium heat.

  5. Pour pancake batter onto the skillet to form pancakes.

  6. Cook on both sides until golden brown.

  7. Serve with your favorite toppings.
