Fully Raw Chipotle Bowl

Ingredients

  • Sliced red bell peppers
  • Sliced green bell peppers
  • Finely chopped red onion
  • Finely chopped tomatoes
  • Chopped green leaf lettuce
  • Smashed hass avocado

For the rice

  • 1 small heads worth of cauliflower rice
  • Juice of half a lime
  • 1 tsp of chopped cilantro

For the beans

  • 1 cup of soaked black beans
  • 1/4 tsp of chili powder
  • 1/8 tsp of pink himalayan salt
  • 1/8 tsp of black pepper
  • 1/8 tsp of garlic powder
  • 1/8 tsp of cumin
  • Sprinkle of cayenne pepper

Preparation

  1. Combine all ingredients for rice into a large bowl and set aside.

  2. Combine all ingredients for beans in a small bowl and set aside.

  3. In bowls of choice, add rice to the bottom followed by beans, bell peppers, tomato, red onion, lettuce, and guacamole.

  4. Top with lots of fresh squeezed lime juice and chopped cilantro. Serve with sauce of choice and enjoy.
