Our Pesto Pasta Salad Jar
Ingredients
- Cooked bow tie pasta
- Sliced kalamata olives (we used )
- Sliced grape tomatoes
- Sliced cucumber
- Diced red onion
- Diced orange bell pepper
- Baby arugula
- For the pesto
- 1 handful of basil
- 1 clove of garlic
- 1 handful of cashews
- 2 tsp of of olive oil
- 1/4 tsp of apple cider vinegar
- 1/8 tsp of pink Himalayan salt
- 2 tsp of filtered water
Preparation
In a pestle and mortar grind all ingredients for pesto excluding water. Grind until smooth then mix in water
In a Jar place pesto at bottom followed by pasta, olives, tomato, cucumber, onion, and bell pepper
When ready to serve pour contents into a bowl over arugula. Garnish with fresh basil leaves and enjoy
