Our Pesto Pasta Salad Jar

Ingredients

  • Cooked bow tie pasta
  • Sliced kalamata olives (we used )
  • Sliced grape tomatoes
  • Sliced cucumber
  • Diced red onion
  • Diced orange bell pepper
  • Baby arugula
  • For the pesto
  • 1 handful of basil
  • 1 clove of garlic
  • 1 handful of cashews
  • 2 tsp of of olive oil
  • 1/4 tsp of apple cider vinegar
  • 1/8 tsp of pink Himalayan salt
  • 2 tsp of filtered water

Preparation

  1. In a pestle and mortar grind all ingredients for pesto excluding water. Grind until smooth then mix in water

  2. In a Jar place pesto at bottom followed by pasta, olives, tomato, cucumber, onion, and bell pepper

  3. When ready to serve pour contents into a bowl over arugula. Garnish with fresh basil leaves and enjoy
