Pancake

Ingredients

  • 100g buckwheat flour
  • 125g glutenfree plain flour
  • 1 tbsp baking powder
  • 30g coconut oil
  • 2 eggs beaten (or 4 tbsp of ground chia)
  • 1 tsp of vanilla paste
  • 300ml almond or other dairy free milk
  • pinch of salt
  • Blend all of the ingredients in a blender. Heat a pan in a medium heat with a tiny bit of coconut oil and when hot, pour the mixture into the pan. You should get six large pancakes
  • Blueberry chia jam RECIPE
  • 50g of blueberries (I use frozen)
  • 2 tbsp of water
  • 2 tbsp of chia seeds

Preparation

  1. Combine the ingredients in a pan and warm through on a low heat until the blueberries are defrosted and the mixture starts to thicken

  2. You can make double and save the rest in an airtight jar for a week or so
