Pancake
Ingredients
- 100g buckwheat flour
- 125g glutenfree plain flour
- 1 tbsp baking powder
- 30g coconut oil
- 2 eggs beaten (or 4 tbsp of ground chia)
- 1 tsp of vanilla paste
- 300ml almond or other dairy free milk
- pinch of salt
- Blend all of the ingredients in a blender. Heat a pan in a medium heat with a tiny bit of coconut oil and when hot, pour the mixture into the pan. You should get six large pancakes

- 50g of blueberries (I use frozen)
- 2 tbsp of water
- 2 tbsp of chia seeds
Preparation
Combine the ingredients in a pan and warm through on a low heat until the blueberries are defrosted and the mixture starts to thicken
You can make double and save the rest in an airtight jar for a week or so
