Peach Yogurt Steamed Cake (Vegan/gluten-Free)

Ingredients

  • 180g white rice flour
  • 50g polenta
  • 20g cornstarch
  • 10g baking powder
  • 1 sprinkle of salt
  • 100g sugar
  • 400g peach "yogurt" (or any other vegan yogurt)
  • 90g water
  • Yogurt and 1 handful of fresh fruits (for topping)

Preparation

  1. Mix all the dry ingredients (white rice flour, polenta, cornstarch, baking powder, salt, and sugar) in a bowl.

  2. Add the peach "yogurt" and water to the dry ingredients. Mix well to obtain a smooth paste.

  3. Fill a mold suitable for your steamer, filling it about 3/4 full. If using a 15cm diameter mold, adjust accordingly.

  4. Steam the cake for 35-40 minutes. To check for doneness, insert the tip of a knife into the cake. It should come out clean.

  5. Once cooked, allow the cake to cool before unmolding.

  6. For the topping, add more yogurt and a handful of fresh fruits.
