Peach Yogurt Steamed Cake (Vegan/gluten-Free)
Ingredients
- 180g white rice flour
- 50g polenta
- 20g cornstarch
- 10g baking powder
- 1 sprinkle of salt
- 100g sugar
- 400g peach "yogurt" (or any other vegan yogurt)
- 90g water
- Yogurt and 1 handful of fresh fruits (for topping)
Preparation
Mix all the dry ingredients (white rice flour, polenta, cornstarch, baking powder, salt, and sugar) in a bowl.
Add the peach "yogurt" and water to the dry ingredients. Mix well to obtain a smooth paste.
Fill a mold suitable for your steamer, filling it about 3/4 full. If using a 15cm diameter mold, adjust accordingly.
Steam the cake for 35-40 minutes. To check for doneness, insert the tip of a knife into the cake. It should come out clean.
Once cooked, allow the cake to cool before unmolding.
For the topping, add more yogurt and a handful of fresh fruits.
