Peanut Satay Noodles

Ingredients

  • 1 tbsp oil for cooking
  • 1 spring onion, chopped
  • for the sauce:
  • 2 tbsp peanut butter
  • 1/2 lime juice
  • 2 cloves garlic
  • 2 tbsp soy sauce
  • 1/2 tsp chilli sauce
  • 2 tbsp water
  • 1/2 tsp rice vinegar
  • optional) sprinkle of chilli flakes

Preparation

  1. Cook the noodles according to packet instructions and set aside.

  2. In a pan, heat the oil and add the green onion, cook for about a minute until fragrant and add the cubed tofu. Cook until golden on all sides, about 8-10 mins.

  3. While the tofu is cooking, prepare the peanut satay sauce by combining all the ingredients in a small bowl. Mix together until smooth. Taste and adjust, you can add more soy sauce or more chilli sauce depending on your taste. You can also add more water if you want a thinner sauce (though it will thicken if you put it in the fridge too)

  4. Once the tofu is cooked, add the noodles back to the pan. Pour in the peanut satay sauce - I like to add a small amount gradually and stir, then add more if I wish. Stir so everything is evenly coated

  5. Divide into two bowls and top with crushed peanuts and fried onion (optional) serve hot
