Pesto Pasta Salad


  • 3 cups of shell pasta
  • 1 tsp of pink himalayan salt
  • 4 tsp of vegan spread (we used @earthbalance)
  • 2 cloves of minced garlic
  • 1 cup of basil pesto (we made ours with cashew, basil, apple cider vinegar, olive oil, pinch of salt, and fresh cracked black pepper)
  • 1 1/2 cups of chopped tomato
  • 1 cup of sliced cucumber
  • 1/2 cup of chopped kale
  • 1/2 cup of sliced kalamata olives
  • 1/3 cup chopped red onion
  • fresh taragon
  • red pepper flakes


  1. In a medium sized pot bring water to a boil, add pasta and salt, once pasta is done drain and set aside

  2. Melt spread with garlic in a small pot on medium heat for just a few minutes

  3. Add spread to pasta as well as pesto and stir well

  4. Now add all veggies into salad, stir until all components are well combined

  5. Garnish with fresh taragon and red pepper flakes and enjoy????
