Light and Satisfying Pesto Pasta Salad

Ingredients

  • 3 cups shell pasta
  • 1 teaspoon pink Himalayan salt
  • 4 teaspoons vegan spread
  • 2 cloves minced garlic
  • 1 cup basil pesto
  • 1.5 cups chopped tomato
  • 1 cup sliced cucumber
  • 0.5 cup chopped kale
  • 0.5 cup sliced kalamata olives
  • 1/3 cup chopped red onion
  • Fresh tarragon
  • Red pepper flakes

Preparation

  1. In a medium sized pot bring water to a boil, add pasta and salt, once pasta is done drain and set aside.

  2. Melt spread with garlic in a small pot on medium heat for just a few minutes.

  3. Add spread to pasta as well as pesto and stir well.

  4. Now add all veggies into salad, stir until all components are well combined.

  5. Garnish with fresh tarragon and red pepper flakes and enjoy.
