Pink Chia Breakfast Pudding

Ingredients

  • 2 tbsp chia seeds
  • 1/2 cup plant milk (oat milk used)
  • 1 tsp pitaya powder
  • Coconut yogurt (optional, for layers)
  • Toppings: banana, raspberries, syrup, seeds, etc.

Preparation

  1. Mix chia seeds with plant milk and refrigerate for 30 minutes to an hour, occasionally stirring the mixture.

  2. Once the mixture is firm, add pitaya powder and mix well.

  3. Optionally, layer coconut yogurt for extra flavor.

  4. Add desired toppings and enjoy!
