Pink Salad Bowl with Tofu and Vegetables

Ingredients

  • 3-4 slices of tofu
  • 1 tsp avocado oil
  • 1 tsp soy sauce
  • Large handful spinach
  • Carrots, cut in halves
  • Spiralized zucchini
  • Spiralized beets
  • Shredded cabbage
  • Radishes, sliced
  • Blueberries

Preparation

  1. In a saucepan on medium heat, add 1 tsp avocado oil and let heat for 2 minutes

  2. Add your tofu and brown on each side for 3-4 minutes.

  3. Turn off heat and toss with soy sauce.

  4. Plate your salad with spinach on the bottom, then toppings.

  5. Serve with your favourite dressing.
