Pink Salad
Ingredients
- 3-4 slices of tofu
- 1 tsp avocado oil
- 1 tsp soy sauce
- large handful spinach
- carrots, cut in halves
- spiralized zucchini
- spiralized beets
- shredded cabbage
- radishes, sliced
- blueberries
Preparation
In a saucepan on medium heat, add 1 tsp avocado oil and let heat for 2 minutes
Add your tofu and brown on each side for 3-4 minutes
Turn off heat and toss with soy sauce
Plate your salad with spinach on the bottom, then toppings
Serve with your favourite dressing
