Pink Salad

Ingredients

  • 3-4 slices of tofu
  • 1 tsp avocado oil
  • 1 tsp soy sauce
  • large handful spinach
  • carrots, cut in halves
  • spiralized zucchini
  • spiralized beets
  • shredded cabbage
  • radishes, sliced
  • blueberries

Preparation

  1. In a saucepan on medium heat, add 1 tsp avocado oil and let heat for 2 minutes

  2. Add your tofu and brown on each side for 3-4 minutes

  3. Turn off heat and toss with soy sauce

  4. Plate your salad with spinach on the bottom, then toppings

  5. Serve with your favourite dressing
