Raw "Garlic Mashed Potatoes"
Ingredients
- 1 cup cashews
- 1 raw head of cauliflower, roughly chopped
- 1 large or 2 small parsnips, peeled (optional)
- 1/4 cup nutritional yeast
- 1 tbsp sesame oil (optional)
- 1 crushed garlic
- water (as needed)
- Juice of 1 lemon
- Sea salt to taste
- Pepper to taste
Preparation
Fresh or dried rosemary (optional) ?Directions: ?Throw cashews, salt, and pepper in a food processor and grind till powdery
Put cauliflower, parsnips, lemon, garlic and nutritional yeast in the bowl and blend, adding some water in a thin stream if you need to in order to facilitate blending
Stop frequently to scrape the bowl, and add 1 tbsp sesame oil for a creamy texture (this isn’t at all necessary, but will give it creaminess)
Stop blending when mixture becomes very smooth and consistent
