Raw Rich Chocolate Truffles
Ingredients
- 3-4 small ripe Avocados
- • 1/4 tsp Sea Salt (will enhance the flavours of the cacao)
- • 2 tbsp unsweetened Almond Milk (homemade is best)
- • 1 tsp pure Vanilla Extract
- • 4 tbsp pure maple or rice maltsyrup • 4-5 drops of pure stevia (depending on desired level of sweetness)
- • 1/2 cup raw cacao powder
- For the Chocolate Coating
- • 1 cup coconut oil (in a liquid consistency)
- • 1/2 cup raw cacao powder
- • 1/2 cup pure maple or rice malt syrup
Preparation
Blend/process all chocolate filling ingredients together in a high speed blender or food processor (I find a food processor works better for this recipe)
Using your hands, form the mixture into small balls (roughly 1 tbsp in size) & place on a cookie sheet lined with baking paper • Transfer to the freezer until firm
While waiting for the balls to firm, commence making the chocolate coating by whisking all the coating ingredients in a separate bowl until a smooth consistency has been reached
Once the truffles have hardened, remove from the freezer and dip each one into the chocolate coating, placing them back on the cookie sheet once coated – if you have any coating leftover this is a time when you can double dip
Return to the freezer until the coating has also firmed (about 2 hours)
Enjoy straight from the fridge/freezer
Note: limit your intake to 2 truffles, as they do contain sweetener & avocado
