Raw Spring Vegetable Soup

Ingredients

  • 2 cups fresh peas, or frozen (thawed)
  • 2 packed cups kale (cleaned with stems removed)
  • 2 cups chopped celery
  • 2 cloves garlic, chopped
  • 1 avocado, peeled and seed removed
  • 1/4 cup freshly squeezed lemon juice
  • 2 cups water
  • 1 teaspoon salt, or to taste
  • 1/2 teaspoon black pepper
  • 2 dashes cayenne pepper, or to taste
  • 1 small carrot, peeled and shredded

Preparation

  1. Place all ingredients, except the carrot, in a high-speed blender. Blend until smooth. Adjust for salt and pepper if needed

  2. Top with shredded carrot and enjoy
