Raw Spring Vegetable Soup
Ingredients
- 2 cups fresh peas, or frozen (thawed)
- 2 packed cups kale (cleaned with stems removed)
- 2 cups chopped celery
- 2 cloves garlic, chopped
- 1 avocado, peeled and seed removed
- 1/4 cup freshly squeezed lemon juice
- 2 cups water
- 1 teaspoon salt, or to taste
- 1/2 teaspoon black pepper
- 2 dashes cayenne pepper, or to taste
- 1 small carrot, peeled and shredded
Preparation
Place all ingredients, except the carrot, in a high-speed blender. Blend until smooth. Adjust for salt and pepper if needed
Top with shredded carrot and enjoy
