Raw Vegan Egg Salad Dressing

Ingredients

Dressing

  • 1.5 cups of raw cashews
  • 3/4 cup water
  • 1 tbsp lemon juice
  • 3/4 tsp turmeric
  • 1 clove of garlic
  • 3/4 tsp sea salt
  • 1/8 tsp of dried dill

Salad components

  • 3 celery stalks
  • 1 cup of mushrooms
  • 1/4 cup of sweet yellow onions

Preparation

  1. Combine all dressing ingredients in a blender and blend until smooth.

  2. Finely chop the celery, mushrooms, and onions if using.

  3. Pour the sauce over the chopped vegetables and add crushed kale chips for extra crunch.
