Raw Vegan Spicy Pad Thai
Ingredients
- 1 cup red pepper
- 1/4 cup raw almond butter
- 1/4 cup of water
- 1 tsp onion powder
- 1 tsp fresh grated ginger
- 1 tsp cayenne pepper
- 1/2 green chilli (or less)
- juice of 1 lime
- 1 tsp clove of garlic, minced
- 1/4 tsp of celtic salt
- 1 tbsp maple syrup ⭐️noodles:
- 1 large zucchini (peeled - if preferred)
- 2 whole carrots (peeled)
Preparation
Use a spiralizer or a julienne peeler to make noodles out of the zucchini and carrots
Place “noodles” in luke warm water for a minute or so until “softer”
Put all of the sauce ingredients in a high speed blender and blend until smooth
Cut any vegetables you like into small cubes: sliced red bell peppers, pea shoots (or other sprouts), scallions, crushed peanuts for topping and sesame seeds
