Raw Vegan Spicy Pad Thai


  • 1 cup red pepper
  • 1/4 cup raw almond butter
  • 1/4 cup of water
  • 1 tsp onion powder
  • 1 tsp fresh grated ginger
  • 1 tsp cayenne pepper
  • 1/2 green chilli (or less)
  • juice of 1 lime
  • 1 tsp clove of garlic, minced
  • 1/4 tsp of celtic salt
  • 1 tbsp maple syrup ⭐️noodles:
  • 1 large zucchini (peeled - if preferred)
  • 2 whole carrots (peeled)


  1. Use a spiralizer or a julienne peeler to make noodles out of the zucchini and carrots

  2. Place “noodles” in luke warm water for a minute or so until “softer”

  3. Put all of the sauce ingredients in a high speed blender and blend until smooth

  4. Cut any vegetables you like into small cubes: sliced red bell peppers, pea shoots (or other sprouts), scallions, crushed peanuts for topping and sesame seeds
