Reindeer Overnight Oat Cake with Homemade Gingerbread Antlers

Ingredients

  • 60g oats
  • 5g chia seeds
  • 1 scoop of salted caramel soy isolate
  • 150ml almond milk
  • 15g plain flour
  • 5g chia seeds
  • 5g coconut oil
  • 1/2 tsp water
  • Sprinkle of baking powder
  • Sprinkle of salt

Preparation

  1. For the oat cake, mix together the oats, chia seeds, salted caramel soy isolate, and almond milk.

  2. Place the mixture in a bowl and leave it overnight to set.

  3. For the gingerbread antlers, mix together the plain flour, chia seeds, coconut oil, water, baking powder, and salt.

  4. Form antler shapes with the gingerbread mixture.

  5. Place the antler shapes on a baking tray lined with baking paper.

  6. Bake in the oven for 15 minutes.

  7. Allow the gingerbread antlers to cool down.

  8. Assemble the reindeer by placing the oat cake as the base.

  9. Use banana slices for the eyes, chocolate chips for the pupils, and a raspberry for the nose.

  10. Place the gingerbread antlers on top of the oat cake.

  11. Serve and enjoy!
