Savory Bean and Veggie Rice Bowl

Ingredients

  • brown rice
  • roasted cauliflower
  • orange cherry tomatoes
  • 1 can black beans
  • half a bag frozen grilled peppers and onions
  • 1/3 cup fire roasted corn
  • 2 tbsp tomato paste
  • 1 tbsp coconut aminos or 2 tsp low sodium soy sauce
  • juice of one lime
  • 1 tbsp maple
  • garlic powder
  • red chili flakes
  • basil
  • guacamole

Preparation

  1. Combine black beans, frozen grilled peppers and onions, fire roasted corn, tomato paste, coconut aminos or soy sauce, lime juice, and maple in a pan.

  2. Heat the mixture through, then add garlic powder, red chili flakes, and basil while heating.

  3. Portion the bean mixture according to hunger level.

  4. Assemble in a bowl with brown rice, roasted cauliflower, and orange cherry tomatoes.

  5. Top the bowl with guacamole for added healthy fats.

  6. Enjoy as a post-workout meal for protein and nutrients.
