Silky Smooth Homemade Vanilla Speckled Salted Cashew Butter

Ingredients

  • • 2 cups raw unsalted cashews
  • • 1 tsp vanilla bean paste or extract
  • • 1/4 tsp Himalayan pink salt

Preparation

  1. Place the cashews on a baking tray and heat in the oven at 200°C for 5-7 mins until very lightly browned. Be careful not to over heat them, less is more here ツ

  2. Transfer the cashews into a high speed blender or food processor and blitz until smooth and creamy. A good blender will do this in 3-5 mins, others can take up to 10 mins, so be patient

  3. Lastly add the vanilla and salt to the cashew butter and blend until combined

  4. Transfer to a mason jar and store in the fridge
