Skillet Double Chocolate Vegan Cookie

Ingredients

Dry

  • 1/2 c cocoa powder
  • 1/4 c coconut flour
  • 1/4 c tapioca starch
  • 1/4 c decadent coconut
  • 1 tsp ground cinnamon
  • 1/2 tsp himalayan salt
  • 1/2 tsp baking soda

Wet

  • 2 flax eggs (6 tbsp ground flaxseed + 6 tbsp water)
  • 1 c oatmilk (or milk of your choice)
  • 1/2 cup agave nectar
  • 1/4 cup nut butter (i used @roseskitchenph PB cacao)
  • 1/4 c coconut oil
  • 1 tbsp vanilla extract

Add-ins

  • Chocolate chips (i used my homemade sugarfree chocolate bar)
  • Cashew nuts
  • Blanched almonds

Preparation

  1. Preheat oven to 350 degrees and grease 8-inch cast iron skillet

  2. Mix ground flaxseed with water to make flax eggs and set aside

  3. Mix dry ingredients followed by wet ingredients until well incorporated

  4. Add cashew nuts or whatever you want to add into the mixture

  5. Pour the mixture evenly into the skillet, add chocolate chips and blanched almonds on top

  6. Bake in the oven for about 25 minutes or until a knife comes out clean
