Smokey Spanish Style Grains & Rice

Ingredients

  • 200g mushrooms chopped
  • 1 red pepper chopped
  • 1 carrot cubed
  • handful of olives
  • handful chopped cherry tomatoes
  • 2 tbsp smoked paprika
  • 2 tsp mixed herbs
  • 1 red chilli finely chopped
  • handful of fresh parsley chopped
  • 1/4 cup coconut milk
  • 2 spring onions chopped
  • 2 garlic cloves chopped
  • 1 large courgette chopped

Preparation

  1. Add the onion & garlic to a pan with a little olive oil on a medium heat cook for 2/3 minutes

  2. Now add in the remaining ingredients bar the parsley and coconut milk

  3. Allow to cook down for 8/10 mins (i like to keep some brunch) now add it the coconut milk stir through the parsley & give it all a good stir

  4. Serve up
