Smokey Spanish Style Grains & Rice
Ingredients
- 200g mushrooms chopped
- 1 red pepper chopped
- 1 carrot cubed
- handful of olives
- handful chopped cherry tomatoes
- 2 tbsp smoked paprika
- 2 tsp mixed herbs
- 1 red chilli finely chopped
- handful of fresh parsley chopped
- 1/4 cup coconut milk
- 2 spring onions chopped
- 2 garlic cloves chopped
- 1 large courgette chopped
Preparation
Add the onion & garlic to a pan with a little olive oil on a medium heat cook for 2/3 minutes
Now add in the remaining ingredients bar the parsley and coconut milk
Allow to cook down for 8/10 mins (i like to keep some brunch) now add it the coconut milk stir through the parsley & give it all a good stir
Serve up
