Speedy Quinoa Bowl

Ingredients

  • roasted butternut squash
  • quinoa
  • sweetcorn
  • ✨ peas
  • ✨ lime smashed avocado
  • smoked tofu
  • ✨ cauliflower pretzels
  • ✨ EBTB

Preparation

  1. Quinoa

  2. I use 1/4 cup dry, add 1/2 cup water to a saucepan and bring to boil then reduce to simmer for 15 mins until water absorbed and if i have time, let sit for 10 mins to steam)

  3. Roasted butternut squash

  4. I just chop a squash and roast it for about an hour, okay not so speedy but you just leave it alone so can just ignore it)

  5. Sweetcorn

  6. Peas

  7. Lime smashed avocado

  8. I smash a bunch of ripe avos with some lime juice at the start of the week and cover it with a reusable food wrap, ensuring the wrap touches the surface so it doesn’t oxidise much - just mix & serve whenever)

  9. Smoked tofu

  10. Cauliflower pretzels

  11. EBTB
