Speedy Quinoa Bowl
Ingredients
- roasted butternut squash
- quinoa
- sweetcorn
- ✨ peas
- ✨ lime smashed avocado
- smoked tofu
- ✨ cauliflower pretzels
- ✨ EBTB
Preparation
Quinoa
I use 1/4 cup dry, add 1/2 cup water to a saucepan and bring to boil then reduce to simmer for 15 mins until water absorbed and if i have time, let sit for 10 mins to steam)
Roasted butternut squash
I just chop a squash and roast it for about an hour, okay not so speedy but you just leave it alone so can just ignore it)
Sweetcorn
Peas
Lime smashed avocado
I smash a bunch of ripe avos with some lime juice at the start of the week and cover it with a reusable food wrap, ensuring the wrap touches the surface so it doesn’t oxidise much - just mix & serve whenever)
Smoked tofu
Cauliflower pretzels
