Spicy Vegetable Soup

Ingredients

  • 1 small white onion, finely chopped
  • 1 garlic clove, minced
  • 2 medium carrots, cubed
  • 1/2 white cabbage, shredded
  • 1 small broccoli head, cut into florets
  • 1/2 teaspoon rosemary
  • 1/2 teaspoon coriander
  • 1/2 teaspoon cayenne pepper
  • fresh parsley, for serving

Preparation

  1. In a large pot fry onions and garlic in olive oil for 5 minutes until golden

  2. Add carrots and cook for another 5 minutes

  3. Pour in 1,5 liters of water or vegetable stock and add cabbage

  4. Bring to a boil and simmer for 15 minutes

  5. Add in broccoli and cook for another 10 to 15 minutes, until all the vegetable are soft

  6. Add spices and season to taste

  7. Serve warm, garnished with fresh parsley

  8. Enjoy!
